The key to this lovely side salad is to make the vinaigrette at least an hour before serving it—that way, the sliced shallots have time to sit in the sherry vinegar and become soft and a bit pickled. In addition to the shallots, this lightly sweet vinaigrette is filled with golden raisins, a touch of Dijon mustard, and a drizzle of honey. Perfectly sweet, this vinaigrette pairs so well with the bitter taste of the grilled wedges of radicchio.

Grilled Radicchio with Golden Raisin Vinaigrette
Ingredients:
- 2 head of radicchio, quartered
- Cooking spray
- For the vinaigrette:
- Pinch of crushed red pepper flakes
- 3 Tablespoons sherry vinegar
- 2 shallots, peeled & thinly sliced
- 1 Tablespoon Dijon mustard
- 1 teaspoon honey
- Pinch of salt and pepper
- ¼ cup extra virgin olive oil
- ¼ cup golden raisins
- Bed of fresh chives, for serving
Directions:
- Spray a grill pan with cooking spray. Place it on the stove and heat over medium-high heat. Place the wedges of radicchio on the grill pan and grill on each side for 1 minute. Remove from the heat.
- At least 1 hour before serving the salad, make the vinaigrette. Place the crushed red pepper, mustard, honey, vinegar and shallot sin a small mixing bowl. Whisk and season with salt and pepper to taste. Allow to sit. Add in the raisins right before serving and stir until all combined and smooth; drizzle the dressing over the wedges of grilled radicchio. (I like to serve this salad over fresh chives, but any green would also work well.)
