Light and fluffy and full of fresh, orange flavor, these buttermilk pancakes are scrumptious. What makes them so light and airy? The last minute addition of a beaten egg while into the perfectly sweet, whole wheat pancake batter, that’s why. ( I added a bit of orange zest and pure vanilla extract into the batter as well, in addition to the fresh orange juice for added flavor.)
