An unusual mix of fillings go into these yummy quesadillas: a quick sauté of shredded collard greens, shallots and white beans. Along with some shredded cheddar cheese and a side of your favorite salsa, this is a lovely lunch idea that I love serving with some sliced tomatoes and pickled jalapenos as well.
