Buckwheat Soba Noodle Stir Fry

 Consider this Asian-inspired dish as a quick and easy dinner option this week.  What I love about a stir fry, not just this particular one, but any stir fry, is that they allow you to be as creative as you want with whatever ingredients you have on hand.  There are basically three steps to any stir fry: 1) the base, whether it be rice or noodles 2) the add-ins/protein whether vegetarian or otherwise and 3) the sauce.

Here I have started with tender, quick cooking buckwheat soba noodles tossed with thinly sliced savoy  cabbage, scallions, grated carrots, fresh ginger and fresh garlic.  For a quick protein addition, thinly sliced eggs are then added into the mix.  For the sauce, a spicy yet tangy mixture of sesame oil, Siracha sauce, soy sauce and lime juice.  For a bit of added texture, I finished my stir fry off with toasted pieces of nori.  Flavorful and fun, my Buckwheat Soba Noodle Stir Fry is only missing a glass of chilled sake and of course, your favorite chop sticks.

Buckwheat Soba Noodle Stir Fry

Ingredients:

  • 1 Tablespoon canola oil
  • 2 garlic cloves, minced
  • 1-inch piece of fresh garlic, peeled and minced
  • 1 bunch of scallions, ends trimmed, thinly sliced
  • 1/2 savoy cabbage, thinly sliced
  • 2 carrots, grated
  • Buckwheat soba noodles
  • 4 large eggs, scrambled
  • 2 Tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 Tablespoon Siracha sauce
  • Juice of 2 limes
  • 2 sheets of nori, crumbled

Directions:

  1. Heat the oil in a wok or large sauté pan. Add in the garlic, ginger and scallions; cook, stirring often over medium heat for 1 minute. Add in the cabbage and carrots and sauté for 3-4 minutes, or until the cabbage is tender.
  2. Meanwhile, bring a large pot of water to a boil. Drop in the soba noodles and cook for 3-4 minutes. Drain and add to a large mixing bowl. Toss together with the veggies, add in the scrambled egg.
  3. Whisk all of the sauce ingredients together in a small bowl. Pour over the noodles mixture and toss well. Divide amongst 4 noodles bowls; top with pieces of toasted nori.
