 A tasty curry dish is a simple weeknight meal that starts with a simple base of red curry paste and coconut milk.  Hearty and rich, curries are easy to make and work well with just about any vegetable you have around the house, or any meat for that matter.  This vegetarian version is filled with vegetables of the season: butternut squash, carrots, parsnips, onions and sweet peppers—not to mention the last minute addition of tomatoes and sweet basil for an extra kick of flavor.  Served over rice, this tasty vegetarian curry should be on your family’s dinner table….and stat!
