This flavorful side dish is a wonderful addition to any Asian-inspired menu. A sauté of tender bok choy and thinly sliced sweet peppers, flavored with ground ginger, garlic, and soy sauce, finished off with a sprinkling of sesame seeds and buttery cashews for added crunch. Braised Bok Choy with Cashews
Ingredients:
- 1 Tablespoon vegetable/canola oil
- 1 head of boy choy, root end removed, stems and leaves cut into bite-sized pieces
- 2 cups of thinly sliced sweet peppers
- 2 garlic cloves, minced
- ¼ teaspoon ground ginger
- ¼ teaspoon salt
- 1 Tablespoon soy sauce
- 1 Tablespoon sesame seeds
- ½ cup cashews
Directions:
- In a wok or large sauté pan, heat the oil over medium-high heat. Add in the bok choy, peppers and minced garlic. Sauté for 5 minutes, or until the bok choy is tender.
- Season with the salt, ground ginger, and soy sauce. Reduce the heat to medium-low; add in the sesame seeds and cashews and cook for an additional 1 minute. Remove from the heat and serve warm.
