 I have sung the praises for Gwyneth Paltrow’s blog Goop (www.goop.com) before but I will say it again and again!  A complete lifestyle blog with wonderful healthy recipes, fashion, beauty, and home content, it is a creative and visually stunning site that I truly love looking through each week.  Searching for a unique and healthy salmon recipe, I came across this recipe for ‘Coconut Poached Salmon’A tender salmon fillet poached in a lemongrass-flavored broth and coconut milk mixture imparts a uniquely wonderful flavor to the salmon.  Flavored with a touch of anchovy paste and served over bitter greens, this nutritious and quick-cooking, one-pot dinner is an utter delight.  Flavorful, healthy, and unique—that is stuff that Goop is all about.
