I am always searching for recipes involving chipotle chiles in adobo sauce. A warm, spicy, super flavorful ingredient that when used in moderation can add a perfect depth of flavor to some unexpected dishes. (I always have a bag of frozen chipotle peppers in adobo sauce in my freezer to defrost and use to liven things up!) This recipe for ‘Roasted Asparagus with Chipotle-Lime Butter’ was a perfect side dish to round out a soft taco menu last night. Tender roasted asparagus flavored with lime zest, topped with a sauce made from melted butter, cilantro, lime juice and the star of the show, chipotle chiles in adobo sauce. A healthy and spicy side dish that will certainly wake up your taste buds!
