Grilled Salmon with Avocado-Grapefruit Salsa

 During the warmer months of the year, we are always trying to cook as much as we can outside on the trusty Weber grill.  Not only to enjoy the mild temperatures and sunshine, but to add that unique grilling flavor to the foods that we know and love.  Grilled salmon is a popular dish for us this time of year.  I am always experimenting with new marinades, rubs or toppings for grilled items like a tasty salmon filet.  One of the tricks I love is to top a grilled protein with a cool, refreshing salsa.  My Grilled Salmon with Avocado-Grapefruit Salsa is a wonderful topping for salmon, chicken, or even a tender flank steak.  A healthy and flavorful mixture of creamy avocado, tart grapefruit slices, diced red onion, cilantro and tart lime juice, this quick-and-easy salsa is utterly delicious addition to the grilling season.

Grilled Salmon with Avocado-Grapefruit Salsa

Ingredients:

  • 4 (7 oz.) salmon filets, skin on
  • Extra virgin olive oil
  • Salt and pepper
  • 2 grapefruits, segmented
  • 1 Haas avocado, diced
  • 1 small red onion, diced
  • 2 Tablespoons chopped cilantro
  • Juice of 2 limes

Directions:

  1. Drizzle a touch of oil on each salmon filet and season with a pinch of salt and pepper. Grill the salmon either outdoors or on a grill pan in the kitchen until the desired temperature of the salmon is reached. (I like to grill salmon about 6 minutes per side, just until it is flaky.)
  2. Meanwhile, combine the rest of the ingredients (from the grapefruit segments on) in a mixing bowl. Toss together with 2 tablespoons of olive oil and a pinch of salt and pepper. Top each grilled salmon filet with some of the salsa.
