Fried Chicken Soft Tacos

 That’s right…you read correctly.  An ultimate southern-inspired soft taco–crispy strips of perfectly fried chicken cutlets placed on a whole wheat tortilla with black beans and all the fixins’.  Buttery avocado, a spicy tomato salsa, cheddar cheese, crisp radishes and shredded romaine lettuce.  Any toppings you want are fair game here; the results are a unique and flavorful taco that frankly, you won’t be able to eat just one of.

Fried Chicken Soft Tacos

Ingredients:

  • 4 chicken cutlets
  • Salt and pepper
  • Chili powder
  • All-purpose flour
  • Panko bread crumbs
  • Buttermilk
  • Canola oil, for frying
  • 1 can black beans, drained and rinsed
  • Whole wheat tortillas, warmed
  • Toppings (suggested):
  • Avocado slices
  • Shredded cheddar cheese
  • Halved radishes
  • Shredded romaine lettuce
  • Fresh salsa, red or green (see recipe below*)

Directions:

  1. Season each chicken cutlet with a pinch of salt and pepper, and a pinch of chili powder. Fill a straight-sided sauté pan with 1-inch deep of canola oil. Heat the oil over high heat to approximately 325 degrees.
  2. In three separate shallow bowls place some all-purpose flour, buttermilk, and Panko bread crumbs. Dredge each seasoned chicken cutlet in the flour, then the buttermilk, then the breadcrumbs until fully coated. Fry the chicken cutlets in the heated oil for 3 minutes on each side; you will know they are done because they will be a beautiful, deep brown color and crispy. Drain the cooked cutlets on paper towels to absorb some of the oil.
  3. Heat the black beans in a small saucepan until warmed through. Slice the fried chicken cutlets into ½ inch strips; to create your tacos, place some warmed beans on each warmed tortilla. Then some chicken and the toppings of your choice.
  4. To make fresh salsa, combine 1 diced tomato, 2 Tablespoons chopped cilantro, 1/2 small red onion, 1 jalapeno diced, juice of 2 limes, 1/2 teaspoon salt and pepper, and 1/4 cup extra virgin olive oil. Toss and allow to sit for at least 1 hour before serving.
