This simple side dish is bursting with a delicious combination of flavors! Crisp yet tender sautéed green beans topped with sweet, roasted cherry tomatoes and the salty taste that only feta cheese can bring to the table. This side dish will be ready in no time, and will surely bring smiles to all of your dinner guests’ faces.

Tomato-Feta Green Beans
Ingredients:
- Extra virgin olive oil
- Salt & Pepper
- 1 pint cherry tomatoes, or San Marzano tomatoes
- 2 garlic cloves, minced
- 12 oz. fresh green beans
- Crushed red pepper flakes
- Feta cheese, crumbled
Directions:
- Preheat the oven to 375 degrees. Line a small baking sheet with parchment paper. Place the cherry tomatoes in a single layer on the baking sheet. Drizzle with 1 tablespoon of oil and sprinkle with ¼ teaspoon salt and a pinch of black pepper. Roast in the preheated oven for 25 minutes, or until the tomatoes are wilted and tender.
- In a large sauté pan, heat an additional 1 Tablespoon of olive oil over medium heat. Add the minced garlic and green beans, season with ½ teaspoon salt and ¼ teaspoon black pepper, and sauté for 5 minutes. The green beans will be tender but still have a crispness to them.
- To serve divide the green beans and roasted tomatoes amongst the plate, and top with some crumbled feta cheese.
