Roasted Asparagus with Feta

As simple as any side dish can get.  My Roasted Asparagus with Feta is a quick-cooking dish made up of perfectly roasted spears of asparagus tossed with crumbled, creamy feta cheese.  Versatile and flavorful, this simple side works well for any occasion.

Roasted Asparagus with Feta

Ingredients:

  • 1 bunch of asparagus ends trimmed
  • 1 Tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Pinch of crushed red pepper flakes
  • ½ cup crumbled feta cheese

Directions:

  1. Preheat the oven to 375 degrees. Line a baking sheet with parchment paper. Arrange the trimmed asparagus spears on the baking sheet. Drizzle with oil and season with salt, pepper and red pepper flakes. Roast the asparagus for 20-25 minutes or until tender and lightly browned. Toss with feta cheese and serve.

    Anna–this looks delicious as always. But equally importantly, Chris and I found a party trick you and Scott must try and master by Christmas…I think any accomplished chef should also know how to saber champagne. It will definitely wow the Martin clan 🙂

      Hey Lexie! Now that’s what I call a party trick! Wowza. I love thinking about the first person who came up with a trick involving a super sharp knife and a glass bottle. 😀 I’m impressed by what a clean cut it produces and how little champagne was lost during the sabering! Certainly a skill we all aspire to posess! Hoping we get to see y’all in a couple weeks for Christmas!
