Tender cubes of roasted beets, flavored with a squeeze of orange juice, atop a multi-grain cracker slathered in creamy goat cheese…what could possible make this appetizer more delicious? A sprinkling of chopped, green pistachios! This brightly colored and super flavorful appetizer is a lovely combination of textures as well: the crunch you get from the multi-grain cracker, the smoothness of the goat cheese, the tender beet, and the buttery crumble from the pistachios. A delicious first course that truly highlights the wonders of the beet.

Roasted Beet, Goat Cheese & Pistachio Canapés
Ingredients:
- 3 beets, scrubbed
- 1 Tablespoon extra virgin olive oil
- Juice from 1 small orange
- Multi-grain crackers
- Goat cheese, softened
- Pistachios, coarsely chopped
- Salt and pepper
Directions:
- Preheat the oven to 375 degrees. Wrap each scrubbed beat in aluminum foil and roast in the preheated oven on a baking sheet, for 45 minutes to 1 hour, or until the beets are tender when pierced with a fork. When the beets are cool enough to handle, remove the foil and with rubber gloves or paper towels, remove the skins from each beet.
- Chop the roasted beets into a dice, toss with olive oil, orange juice and a pinch of salt and pepper.
- To assemble, spread some goat cheese on each cracker. Then top with some roasted beets and finish them off with a sprinkling of chopped nuts.
