Grilled Chicken Salad with Cantaloupe, Feta Cheese & Basil Oil

Ingredients:

  • 2 chicken breasts, grilled to your liking (or the breasts of a store bought rotisserie chicken, cut into slices)
  • A mixture of artisanal greens
  • ½ cantaloupe, cubed
  • ¼ cup crumbled feta cheese
  • ½ cup fresh basil leaves
  • ½ cup extra virgin olive oil
  • Juice of ½ lemon
  • Salt and pepper to taste

Directions:

  1. Allow the grilled chicken to rest and then slice it into ½-inch slices. Place a mixture of greens on each plate. Top with the grilled chicken, cantaloupe cubes and a sprinkling of feta cheese.
  2. To make the basil oil, place the basil leaves, olive oil, and the lemon juice in a mini-chop food processor. Pulse to puree until the ingredients are well blended and the mixture is smooth and bright green in color. Season the oil with salt and pepper to taste. Use this basil oil as the dressing for each salad.
