Deanna, one of the good friends I made while in Italy, although born and raised in Melbourne, Australia, grew up in a full blown Italian household.  Seeing that both sets of her grandparents were from Italy, she grew up in a household where Italian food was on the menu almost every night, and most family conversations happened in Italian.

I was of course intently listening when she described a baked peach dessert that her Italian grandmother often made.  My version of this dish, Baked Peaches with Almond Cookies & Mascarpone Cheese, is similar to the original, but I have substituted store bought almond butter cookies for the Italian amaretti cookies she described, and mascarpone cheese for a scoop of vanilla gelato.  Whichever toppings you decide on, this summertime dessert is quick and easy—with a dollop of pure Italian tradition.

Baked Peaches with Almond Cookies & Mascarpone Cheese

Ingredients:

  • 2 large peaches, halved and pit removed
  • 2 Tablespoons unsalted butter
  • 1 teaspoon granulated sugar
  • Almond butter, or amaretti cookies, crumbled
  • Mascarpone cheese, room temperature, for serving
  • Fresh mint leaves, for garnish

Directions:

  1. Preheat the oven to 375 degrees. Line a baking sheet with parchment paper and place the 4 peach halves on the baking sheet. Place ½ tablespoon of butter in the center of each peach and sprinkle 1/4 teaspoon of sugar over each halved peach as well. Bake in the preheated oven for 25 minutes, or until the peaches are tender and the juices have begun to run.
  2. Remove the peaches from the oven and allow them to cool to room temperature. Serve with a dollop of mascarpone cheese, a sprinkling of crushed cookies, and a mint sprig for garnish.
