My husband is an almond fanatic—the mere mention of almond-flavored treats and his face automatically lights up. I share in his love of all things almond, even in savory dishes, so I am always snipping recipes from magazines and dog-earring recipes in cookbooks containing this magical ingredient.
I was thrilled to be introduced to these Italian almond cookies last week here at Mami Camilla; when I say they are the best almond cookies ever, I am not exaggerating. They surpass any almond macaroon I have ever tasted—the outside is a bit crisp while the inside stays super chewy and full of fresh almond flavor. In this recipe we use almond flour, almond extract, and a garnish of a whole almond, to really get the idea across that these addictive treats are all about the decadent taste of…you guess it! Heavenly almonds.

The Best Almond Cookies Ever
Ingredients:
- 200g sugar
- 250g almond flour
- Zest of 1 large lemon
- 3 egg whites
- 1 teaspoon almond extract
Directions:
- In a large mixing bowl, mix together all of the recipe’s ingredients until combined.
- Place the cookie dough in a piping bag fitted with a star tip. Pipe 3-inch circles of the cookies dough onto a parchment-lined baking sheet. Top each cookie with a whole, unsalted almond.
- Chill the cookies for 30 minutes before baking them in a 325 degree oven for 15 minutes.
