Such a healthy soup that freezes beautifully as well! A lovely soup no matter what time of year, this vegetable broth-based delight is filled with fennel, onions, garlic, protein-packed chickpeas, tomatoes, cheesy tortellini, sliced mushrooms and nutrient-rich kale. (I actually swapped in some spinach for the kale because that is what I had on hand, but any of your favorite greens will do just fine.) A great primer soup to make with youngsters, too because it shows everyone how easy it is to make a big pot of soup from scratch! Healthy, hearty and super delicious.
