‘Romaine & Sugar Snap Peas with Pecan Dressing’

What a fabulous and unique idea for a flavorful salad dressing!  Roasted pecans flavored with a touch of salt and butter are pureed in a food processor into a nut butter consistency; flavored with a touch of lemon juice, honey, and olive oil and your dressing is born.  Served over a simple salad of crisp Romaine lettuce leaves, more roasted pecans and blanched sugar snap peas for added crunch and a touch of sweetness.  If you don’t have pecans on hand, I recommend using toasted almonds, hazelnuts or even cashews.
