We already know that pork and mustard are a great flavor pairing, but don’t overlook the tasty Italian pairing of pork and fennel as well. Think of a classic porchetta when I say that; tender pork that in that case is flavored with fennel seeds or fennel pollen. In this case, a pork tenderloin is paired with fresh fennel that roasts right alongside the tender roast, and some of the fennel fronds are used in the glaze as well. Also in the tasty glaze is Dijon mustard (I used a coarse grain Dijon here), sweet honey, olive oil and chopped garlic. The glaze goes on the pork as well as the fennel wedges and both turn out perfectly cooked. Try serving this lovely dish with a serving of rice pilaf, or even garlicky mashed potatoes.
