Endive Salad with Oranges, Pistachios & Pecorino Romano

This is the time of year to embrace the wide variety of bitter greens available!  Whether it is endive, escarole, chicory, radicchio, arugula, broccoli rabe—you name it, they are all great tossed into a pot of soup, served fresh in a salad, or used in a quick sauté as a satisfying side dish.  This lovely salad is made with fresh endive, sliced ripe oranges, pistachios and salty cubes of Pecorino cheese.  A simple drizzle of fruity olive oil and Champagne vinegar make for a tasty and elegant salad idea.
