Chard Stuffed Turkey Tenderloin Marinara

I love the southern Italian influences in this hearty stuffed turkey dish.  A popular flavor combo in that region is slightly sweet-tangy-salty, otherwise known as agrodolce.  We get that in this dish with the sweet raisins, the salty flavor of the prosciutto-wrapped meat, and the tangy splash of vinegar in the sauteed greens.  This filling is wonderful in any meat really; I used turkey tenderloins, but a pork tenderloin, plump chicken breasts or even a seared flank steak would work well.

Swiss Chard & Golden Raisin-Stuffed Turkey Tenderloin with Marinara Sauce

Ingredients:

  • 1 lb. turkey or pork tenderloin
  • salt and pepper
  • olive oil
  • 1 large head of Swiss chard, cut into bite-sized pieces
  • 3 garlic cloves, thinly sliced
  • pinch of crushed red pepper flakes
  • 1 Tablespoon balsamic or apple cider vinegar
  • 1/4 cup raisins
  • 8 thin slices of prosciutto
  • Kitchen twine
  • Jar of your favorite marinara sauce

Directions:

  1. Preheat the oven to 350 degrees. Spray a roasting pan with olive oil spray. Cut a deep pocket in the tenderloin’s side, careful not to cut through completely. Season the outside and inside of the turkey tenderloin with salt and pepper.
  2. Heat 1 Tablespoon of olive oil along with the crushed red pepper flakes and garlic cloves over medium heat. Cook for 1 minute. Add in the Swiss chard and cook an additional 5 minutes; season with a pinch of salt and pepper. Add in the vinegar and raisins. Allow the filling to cool to room temperature.
  3. Stuff the turkey tenderloin with the chard mixture. Wrap the prosciutto slices around the turkey tenderloin. Secure the turkey tenderloin with kitchen twine. Place in the prepared pan.
  4. Pour the wine around the tenderloin and bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165 degrees. Remove the twine and serve slices of the stuffed turkey on a bed of warm marinara sauce.
