This scrumptious green curry dish is wonderful served over brown rice with a sprinkling of salted peanuts for a crunchy bite.  Courtesy of Martha Stewart Living magazine, this simple curry is made with coconut milk, green curry paste and flaky cod.  To accompany the fish, cubes of sweet potato and eggplant are cooked along with fresh basil and a chopped red chili pepper for heat.  Ready in no time, this decadent curry dish is a great weeknight dinner option!
