This flavorful Mexican stew will knock-the-socks-off your dinner guests! Posole, a traditional Mexican stew flavored with chile, hominy, tomatillos, and lime juice, is typically made with pork, but this lightened-up version uses flaky cod instead. Simple in its ingredients but complex in its finishing flavor, this hearty stew is gorgeously colored from the green tomatillo base, sliced red radishes, sliced serrano chiles and the bright white pieces of tender cod. I like to serve this stew over white rice, but it is also great in a large bowl just as is.
