One of my husband’s favorite flavor profiles is anything almond. Everything from French pastries to a handful of smoked almonds as a snack, to any other sweet breakfast treat like this one– if it involves almond extract, almond paste, or actual almonds… he’s eating it! I have made these pancakes a few times before and they are always a hit. They use a nice boxed buttermilk pancake mix as their base, but the secrets are in the add-ins. Along with water, you stir in a mixture of creamy mascarpone cheese, almond extract, almond paste, and vanilla extract right into the batter. Light and fluffy and filled with sweet almond flavor, these pancakes (courtesy of the fabulous Giada De Laurentiis) are some of our favorites, and are lovely served with warm maple syrup and fresh, tart raspberries.
