A jar of red, green or yellow curry paste should be a staple ingredients in everybody’s pantry. When added to your favorite vegetables and / or proteins, along with a can of light coconut milk, a simple yet extremely flavorful supper is magically created. I love to serve healthy curries like these over brown rice with a squeeze of spicy Sriracha sauce for added heat.
Not only should a jar of curry paste be in your pantry, but as I’ve mentioned before, The Healthy Matcha Cookbook should be within arms length as well. I adore the idea for this cookbook—healthy recipes that sneak in the power of matcha green tea powder. I just can’t get enough of these recipes! In this simple fish curry recipe that useds cubes of mahi mahi, green curry paste is used in addition to a teaspoon of green matcha powder for a secret antioxidant add-in. This recipe is just lovely.

‘Fish Curry’
Ingredients:

- 2 Tablespoons olive oil
- 1 onion, chopped
- 1 Tablespoon green curry paste
- 1 (14 oz.) can lite coconut milk
- 1/2 cup vegetable stock
- 2 Tablespoons fish sauce
- 1 teaspoon matcha powder
- 1 Tablespoon sugar
- 1 tomato, cut into cubes
- 1 1/2 lbs. Mahi Mahi, cut into cubes
- 12 oz. fresh broccoli florets
- 1 lime, juiced
- fresh cilantro, chopped
Directions:
- Heat oil in nonstick large skillet over medium to high heat. Add chopped onion and cook for 3 minutes or until soft or beginning to brown.
- Reduce heat to medium and add the curry paste. Stir until fragrant, about 1 minute. Add coconut milk, stock, fish sauce, matcha, and sugar. Bring to a boil. Add the tomatoes and fish. Cook further for 5 minutes or until fish is almost cooked.
- Add the fresh broccoli and cook another 2-3 minutes. Add lime juice and garnish with cilantro.
