I adore this ooey-gooey white pizza. It starts with your favorite pizza dough being slathered with a simple pistachio pesto: a quick puree of shelled pistachios and olive oil–then comes the creamy fresh mozzarella cheese, crumbled goat cheese, and salty Parmesan cheese. All of which combine and melt beautifully in the super hot oven, making for a dreamy topping that gets crusty and browned on the edges. Delightful as is, if you wanted, you could also add some roasted whole garlic cloves to the pizza if you wish, or even thinly sliced prosciutto.
