If you know me well then you know my cocktail of choice is a dry martini. And of course by martini, I mean a classic gin martini–Tanqueray please. Lately I have gone the Gibson route meaning a dry martini with a cocktail onion instead of an olive. I just love the pickled, tangy taste of the cocktail onion floating in the gin. ( Is it cocktail hour yet?!) With a bag of frozen pearl onions in the freezer, I was excited to see this recipe for The Gibson in a recent issue of Bon Appetit magazine, that starts with pickling your own onions. A fun thing to make and enjoy, a jar of these lovely pickled cocktail onions would also be a great gift for martini drinkers in your life this Holiday season!
