It seems like every year around this time when the air is crisp, the humidity has disappeared and the trees are slowly changing into their lovely fall hues, I crave a homemade apple pie. This year, I decided to make a crustless version, otherwise known as a crisp. Tender sliced apples tossed in a touch of ground cinnamon and sugar, with a squeeze of lemon juice for freshness; all topped with a crunchy and flavorful combination of crushed thin almond cookies, sliced almonds and old-fashioned oatmeal. Baked with a few dots of butter until bubbly, this delectable treat smells just as comforting as it tastes.

Cinnamon-Almond Apple Crisp
Ingredients:
- 4 apples, thinly sliced
- ½ cup granulated sugar
- Juice of 1 lemon
- 1 teaspoon ground cinnamon
- ½ cup old-fashioned oats
- ¼ cup sliced almonds
- ½ cup crushed almond cookies
- 1 tablespoon unsalted butter
Directions:
- Preheat the oven to 350 degrees. Spray an 8-inch baking dish with cooking spray. In a mixing bowl, toss together the sliced apples, the sugar, the lemon juice and the cinnamon. Place the mixture into the baking dish.
- In another mixing bowl, toss together the oats, almonds and crushed cookies; sprinkle evenly over the apple mixture. Dot with the butter and bake in the preheated oven for 45-50 minutes or until bubbly and the top browned.
