‘Chicken Salad with Bok Choy, Almonds & Apricots’

The orange-ginger vinaigrette really ‘pops” on this healthy combination of bok choy, chicken, sliced radishes and crunchy almonds.  We grilled both the chicken and the bok choy before slicing both, to give this salad a nice summertime feel to it.  This entree salad is tasty as a lunchtime treat or a light suppertime delight–your pick!
