I love this pairing of flavors and textures: creamy avocado and sweet, juicy honeydew melon. When both of these fruits are at their peak of ripeness they are fabulous on their own, but a bite of them together is refreshing yet extremely decadent. I used an organic golden honeydew melon for a bit of color contrast and drizzled each halved avocado with a touch of mustard vinaigrette for a savory kick. This dish would also be visually lovely if you sliced the avocado, served it on a bed of baby greens and then made a salsa out of the honeydew melon with maybe a bit of chopped peppers for a touch of heat.
