In every issue of Food & Wine magazine, they feature a special Salad of the Month. For the month of July they featured a series of six potato salad that mix-in an array of ingredients into simple boiled potatoes that have been tossed in a flavorful lemon vinaigrette. I decided to try the Greek variation on the potato salad that includes hard-boiled eggs, sautéed leeks, feta cheese, and tarragon. A fresh and unique variation of a potato salad that is just perfect this time of year with just about anything hot coming off of the grill!
