I love this simple salad from Cooking Light magazine.  Peppery baby arugula tossed together with plump, sweet blueberries and crunchy pistachios. Served with a light coating of sherry vinegar  and olive oil, this nutritious side salad is bursting with flavor and good-for-you ingredients that everyone loves!
