French toast is one of my favorite breakfast treats. Not only is it easy to make, but you most likely already have the ingredients you need in the fridge. I love coming up with flavor variations for French toast. This time I had a jar of blueberry preserves and some crème fraiche in the fridge, along with buttery local pecans in the pantry. So I went with that tasty flavor combination! The tart, creamy dollop of crème fraiche slightly melts on top of the warm French toast and pairs beautifully with the sweet blueberry preserves and crunchy pecans. French toast is always impressive, and always welcomed at my breakfast table.

Blueberry French Toast with Crème Fraîche & Pecans
Ingredients:
- 4 slices of whole wheat bread
- 2 large eggs, lightly beaten
- 1 ½ cups half and half
- 1 tablespoon orange liqueur
- ½ cup granulated sugar
- Pinch of salt
- 1 Tablespoon pure vanilla extract
- 2 Tablespoons unsalted butter
- Blueberry preserves
- Crème fraiche
- Pecans, roughly chopped
- Maple syrup, for serving
Directions:
- To make the custard, whisk together all of the ingredients from the eggs through the vanilla extract in a large mixing bowl. Dip each piece of whole wheat bread into the custard mixture for 5 minutes or until very soft.
- In a non-stick skillet, cook 2 pieces of toast at a time in 1 Tablespoon of melted butter over medium-high heat. Cook for approximately 3 minutes per side, flipping once, or until lightly browned. Serve the French toast with a dollop of preserves, crème fraiche and a sprinkling of pecans. Also serve with a drizzle of maple syrup if desired.
