Roasting carrot rounds with a touch of olive oil and a sprinkling of salt and pepper is as simple as it gets. Roasting the carrots brings out their natural sweetness and makes them both lightly browned and super tender. Roasted Carrots with Dill
Ingredients:
- 5 carrots, scrubbed, cut into 1/2-inch rounds
- Extra virgin olive oil
- Salt and pepper
- Fresh dill, chopped
Directions:
- Preheat the oven to 375 degrees. Place the carrot rounds in a single layer on a baking sheet. Toss with 1 Tablespoon of oil and a sprinkling of salt and pepper. Roast in the preheated oven for 15-18 minutes, or until tender. Sprinkle with the chopped fresh dill and serve warm.
