Oh la la! Ce hamburger est merveilleux! We were craving a homemade burger this week and when I surveyed the cheese drawer and saw crumbled blue cheese, my mind immediately said ‘hmmm…what other flavors go well with creamy blue cheese?’ Red wine perhaps? (But of course!) Caramelized onions for starters? (Now we’re talking…) What about wilted spinach?  (Mais oui!)

I flavored the ground sirloin with the crumbled blue cheese and red wine, in addition to some minced garlic.  I cooked the sliced onions in a touch of butter and oil until sweet and tender, roasted slices of tomatoes for an extra special addition to the burgers, and wilted some spinach for that touch of green that every burger needs.  All atop a crusty, toasted French hamburger bun, this burger was irresistibly flavorful.  Needless to say, there was not a lot of talking at the dinner table with this burger, just praises for this wonderful combination of French flavors!

Ingredients:

  • For the burgers:
  • 1 lb. ground beef
  • 2 oz. blue cheese, crumbled
  • 2 garlic cloves, minced
  • 2 Tablespoons dry red wine
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • For the caramelized onions:
  • 2 Tablespoons unsalted butter
  • 2 Tablespoons olive oil
  • 2 large yellow onions, peeled and thinly sliced
  • ¼ teaspoon salt
  • For the wilted spinach:
  • 1 Tablespoon extra virgin olive oil
  • 4 cups baby spinach, washed and patted dry
  • ¼ teaspoon salt
  • For the roasted tomato slices:
  • 2 large tomatoes, sliced into 1/2-inch slices
  • Drizzle of olive oil
  • Pinch of salt and pepper
  • For serving:
  • Toasted hamburger buns

Directions:

  1. Prepare your outdoor grill or indoor grill pan. Also, preheat the oven to 375 degrees. To make the roasted tomatoes, place the sliced tomatoes on a parchment-lined baking sheet, drizzle with olive oil, and a pinch of salt and pepper. Roast in the preheated oven for 15-20 minutes or until tender.
  2. To make the caramelized onions, melt the butter together with the olive oil, in a nonstick skillet over medium heat. Add in the sliced onions, season with salt, and cook, stirring often over medium-low heat, for 40-45 minutes, or until the onions are tender and caramelized.
  3. In a large mixing bowl add in the ground beef, garlic, blue cheese, salt, pepper and red wine. Mix together with your hands until the ingredients are fully incorporated. Form into 4 hamburger patties. Grill on the grill or grill pan, flipping once, until the burgers are done to your liking. Toast the hamburger buns on your grill as well until lightly browned.
  4. To wilt the spinach, add the olive oil into a sauté pan and heat over medium-high heat. Add in the spinach leaves, season with salt, and cook, tossing often with tongs, for 2 minutes, or until the spinach is wilted.
  5. To assemble the burgers, place some of the wilted spinach on the base bun of each burger, followed by a cooked hamburger patty. Top with a roasted tomato slice and some caramelized onions.
