Throughout the past couple of years, kale has been presented to us a variety of different forms: braised, sautéed, roasted and made into kale chips–one of my favorite ways of cooking kale is well, not cooking it at all! I love mixing bite-sized pieces of raw kale together with other seasonal ingredients like in this recipe for my Raw Kale & Apple Salad with Gorgonzola. Tender kale and crisp cubes of apples tossed together with thinly sliced red onion, creamy Gorgonzola cheese, and finished off with a drizzle of homemade lemon vinaigrette. This salad is not only healthy, but packs in a ton of flavor into each bite.

Raw Kale & Apple Salad with Gorgonzola
Ingredients:
- 1 large head of kale, stems removed, leaves cut into bite-sized pieces
- ½ large red onion, thinly sliced
- 2 small apples, cubed
- Gorgonzola cheese
- Freshly ground black pepper
- For the vinaigrette:
- 1 Tablespoon Dijon mustard
- Juice of 2 lemons
- ¼ cup extra virgin olive oil
- Pinch of crushed red pepper flakes
- Pinch of salt and pepper
Directions:
- To make the vinaigrette, whisk together its ingredients until emulsified.
- Toss the kale leaves, red onion, apple and blue cheese together in a mixing bowl. Divide amongst salad plates and drizzle with the lemon vinaigrette.
