I love the simplicity of each and every recipe found in Alice Waters’ recent cookbook, In the Green Kitchen. A wonderful collection of classic recipes and techniques that we should all strive to master, one of my favorites so far is the recipe for a simple ‘Fried Fish with Pickled Vegetables.’ I used a tilapia here, but any firm white-fleshed fish will do; a simple breading of flour, eggs, and Panko breadcrumbs on the fish before a quick fry in unsalted butter. To gild the lily, you serve this simple yet decadent fried fish filet with a topping of your favorite mix of pickled vegetables.
I could see a nice gardeniera mix here, some pickled green beans, or perhaps even a serving of homemade pickled okra. I was lucky to have recently purchased a mixture of spicy pickled vegetables while in Birmingham at their fabulous Pepper Place Farmer’s Market, so this was my pickled vegetable batch-of-choice. The contrast of the crispy fried fish with the spicy, pickled vegetable flavor is truly Southern, and truly unforgettable.

‘Fried Fish with Pickled Vegetables’
Ingredients:
- 4 tilapia filets (any firm white fish will do here)
- Cajun seasoning
- All-purpose flour
- 2 eggs, lightly beaten
- Panko breadcrumbs
- Unsalted butter
- Pickled vegetables of your choice
Directions:
- Season both sides of each tilapia filet with a touch of your favorite Cajun seasoning. Melt 2 tablespoons of the butter in a nonstick skillet; this will cook 2 fish filets at a time. (Save the remaining 2 tablespoons of butter for the other 2 filets.)
- In 3 shallow bowls, place the flour in one, the eggs in another and the breadcrumbs in the last. Dredge each seasoned fish filet in the flour first, then the eggs, then the panko breadcrumbs.
- In the melted butter, fry each fish filet over medium-high heat for 2-3 minutes per side. The fish should be lightly browned and crisp on the outside, and fully cooked on the inside.
- Serve the fried fish with a side of your favorite pickled vegetables.
