Steak Salad with Grilled Red Onions & Blue Cheese

 One of my favorite go-to dinners is marinated skirt steak grilled alongside tender red onions, and served over mixed greens with a sprinkling of creamy blue cheese.  Tossed with your favorite homemade vinaigrette and whichever salad fixins’ you crave, this is a colorful and super flavorful dinner that is ready in no time.  If you haven’t already invested in a grill pan, I suggest you do; it is a wonderfully convenient way to grill your favorite dishes in the comfort of your own home.  It produces those grill marks that we all love and it makes for easy clean up as well.  Try my Steak Salad with Grilled Red Onions & Blue Cheese; soon you’ll be just as addicted to this simple entrée salad as we are.

Steak Salad with Grilled Red Onions & Blue Cheese

Ingredients:

  • 1 ½ lb. flank steak
  • Salt & pepper
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons fresh rosemary, chopped
  • Extra virgin olive oil
  • 4 cups mixed greens
  • Cherry tomatoes, grated carrots, sliced mushrooms, chopped scallions
  • Crumbled blue cheese
  • Your favorite vinaigrette, for serving

Directions:

  1. Thirty minutes before cooking, season the flank steak with ½ teaspoon of salt and freshly ground black pepper. Drizzle it with 1 Tablespoons of oil, the Worcestershire sauce and the fresh rosemary. Allow the meat to marinate for 30 minutes.
  2. Heat an oiled grill pan over medium-high heat and place the meat and red onions on the grill pan. Grill, flipping once, for 3-5 minutes per side; 3 minutes for medium rare steak. Remove the onions and meat form the grill and allow it to rest for 10 minutes after grilling. Then slice the grilled steak.
  3. In the meantime, place the greens and your choice of salad mix-ins in a large mixing bowl. Toss with the blue cheese crumbles and your dressing of choice. Serve the greens with some of the meat and the grilled red onions. Sprinkle with pepper before serving.
