I love experimenting with unique, homemade BBQ sauces. Whether on grilled chicken or pork, I am not partial to just one flavor of barbeque sauce: sweet and tangy, mustard-based, vinegary, or in this case, sweet and spicy, I love all sauces equally. What makes this sauce extra special however is the use of a specific variety of seasonal produce: rhubarb. If you’re not familiar with rhubarb, it is a plant similar to celery in appearance, but has pinkish-red stalks instead of green. It is sweet and tangy, a perfect combination with other sweet fruits like strawberries and raspberries, but also a nice combination here in a savory dish. This sauce is made with a puree of ketchup, onions, rhubarb, chipotle chile powder and vinegar. Tangy, sweet and spicy, this sauce is a delicious summertime glaze for perfectly grilled chicken thighs.
