This sounds like a salad for superheros I realize, but it very well could be! I call this scrumptious salad The Ultimate Power Salad because it is chock full of yummy superfoods. If you aren’t familiar, superfoods are defined as nutrient-dense foods that pack a lot of punch in terms of their flavor and health benefits. This salad starts with a base of tender kale and the list goes on from there: kale sprouts, roasted edamame for a punch of protein, dried cranberries for sweetness, walnuts for crunch, and a tart vinaigrette made from low-fat Greek yogurt and pomegranate juice. A healthy and super delicious salad that is perfect before a long hike or a day spent working in the garden.

The Ultimate Power Salad
Ingredients:
- Frozen edamame, thawed
- Extra virgin olive oil
- Salt & Pepper
- Fresh kale, torn into bite-sized pieces
- Kale sprouts
- Walnuts
- Dried cranberries
- 2 parts low fat Greek yogurt, 1 part pomegranate juice
Directions:
- Preheat the oven to 400 degrees. Place the thawed edamame on a baking sheet and drizzle with a touch of the oil; sprinkle with a tiny bit of salt and pepper. Roast for 5-7 minutes or until lightly browned.
- Toss the kale, sprouts, walnuts and cranberries together with the roasted edamame. To make the dressing, whisk the yogurt and pomegranate juice together until smooth. Drizzle the salad with some of the vinaigrette.
