The local strawberries this time of year are plump, juicy, and bursting with sweetness. I can’t seem to stop buying them, whether from our local supermarket or our CSA, and eating them for that matter! Whether it be in breakfast recipes as an addition to oatmeal or muffin batter, or as a dessert topping, these miracles of nature are hard to resist. Wanting to try them in a sweet-savory flavor combination, I decided to toss sliced strawberries into a salad with tender bibb lettuce, crunchy sliced almonds, flavorful rotisserie chicken, and creamy blue cheese. What a lunchtime delight! For an extra special touch, I made a creamy poppy seeding dressing from red wine vinegar and Greek yogurt to finish it all off. This delectable salad will have you counting down the minutes until lunchtime, I guarantee it.

Bibb Lettuce Salad with Chicken, Strawberries, Blue Cheese & Almonds
Ingredients:
- Bibb lettuce, washed and dried
- Rotisserie chicken
- Sliced almonds
- Blue cheese, preferably Gorgonzola, crumbled
- Strawberries, hulled and sliced
- For the dressing:
- (Makes approximately ½ cup)
- ½ teaspoon poppy seeds
- ¼ cup Greek yogurt, plain
- 3 Tablespoons red wine vinegar
- Pinch of salt and pepper
Directions:
- Toss all of the salad ingredients together on top of the bibb lettuce pieces. To make the poppy seed dressing, whisk together the ingredients until smooth and creamy. Drizzle on top of the prepared salad.
