Each year, ‘Louisiana Cookin’ magazine, the incomparable publication on Cajun and Creole food, holds its Sweet Rewards Recipe Contest. Readers from all across the country submit their favorite recipes that must include one specific ingredient–mashed sweet potatoes. Whether canned or fresh, I enjoy seeing the unique and tasty ideas that the contestants enter. The Grand Prize Winner for the 2013 contest was Harvey Morris from Chicago, Illinois and his submission was for ‘Sweet Potato-Bacon Biscuits.’ These fluffy biscuits have both the sweet flavors of mashed sweet potatoes and brown sugar, but also the crunch and saltiness from crumbled bacon, the creamy taste of sharp cheddar cheese, and a hint of spice from a touch of cayenne pepper. Yum and yum! These biscuits were like any other I have ever tasted; flavorful, fluffy and soft as pillows. They would be a welcomed guest at the dinner table, Sunday lunch, or even a surprise side at breakfast.
