Old Fashioned Oatmeal with a Warm Berry Compote
Ingredients:
- A bowl of your favorite oatmeal, cooked to your liking
- For the compote:
- 1 cup of mixed berries (strawberries, blackberries, blueberries, raspberries—or any mixture thereof)
- 2 Tablespoons water
- 1 Tablespoon maple syrup
- ¼ teaspoon pure vanilla extract
- 1 Tablespoon Pomegranate seeds, for garnish (optional)
Directions:
- In a medium saucepan, place the berries, water, maple syrup, and vanilla. Cook, stirring often over medium-high heat for 5 minutes, or until the sauces thicken and the berries become soft.
- Serve over a warm bowl of oatmeal, garnished with pomegranate seeds if desired.
