The great thing about this recipe is that you truly don’t miss the butter. Nothing against the grand ingredient of butter of course, but it is nice to lighten things up a bit sometimes. My Olive Oil Mashed Potatoes are a creamy side dish flavored with the distinct taste of quality extra virgin olive oil. The simplest of ingredients are used here—red potatoes, salt, pepper, milk and olive oil. Don’t use your regular cooking olive oil for these potatoes—step up the flavor with a high quality olive oil with a distinct flavor; you’ll be glad you did.

Olive Oil Mashed Potatoes
Ingredients:
- 4 large red potatoes, peeled
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- ¼ cup milk
- 1/3 cup quality extra virgin olive oil
Directions:
- Place the peeled potatoes in a large pot of water. Bring to a boil, reduce the heat to a simmer, and cook for 20-25 minutes, or until the potatoes are tender when pierced with a fork. Drain the potatoes and place them in a large mixing bowl.
- Mash the potatoes with a fork or potato masher. Season with the salt and pepper, and then add in the milk and olive oil. Stir together until creamy and smooth.
