While shopping yesterday in the grocery store, I came upon a bag of premixed coleslaw—not your typical cabbage-based slaw, but a broccoli slaw. That’s right, the stems of broccoli (which is so often thrown away) were peeled and cut into matchsticks and mixed with matchstick carrots and a few pieces of red cabbage as well. Intrigued by this mixture, I thought it would make great coleslaw when mixed with matchstick apples as well. This healthy and simple side dish (which goes wonderfully with yesterday’s Wiener Schnitzel!) is crunchy, flavorful and utterly divine. Whether you buy the bagged variety like I did, or make the slaw with leftover broccoli stems, toss the mixture with a Dijon-lime juice vinaigrette for a subtle dressing.

Broccoli & Apple Slaw
Ingredients:
- 1 bag of broccoli slaw (or regular cabbage-based slaw if you prefer)
- 1 large apple
- For the vinaigrette:
- Juice of 2 limes
- 1 teaspoon Dijon mustard
- 1/3 cup extra virgin olive oil
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- Pinch of crushed red pepper flakes
Directions:
- Place the coleslaw mixture in a large mixing bowl. Cut the apple (peel on) into small matchsticks of similar size.
- Make the vinaigrette by whisking together all of its ingredients; lightly toss with the coleslaw mixture and serve.
