My new favorite breakfast time treat is a fresh, super healthy Berry-Almond Smoothie. A tall, cool glass of pureed frozen berries, crunchy almond butter, smooth almond milk and a touch of good-for-you flax seed meal. I love this flavor combination—frozen blueberries, raspberries, strawberries and blackberries mixed with the rich almond butter and calcium-rich almond milk. If you have never used flax seed meal before, it is finely ground flax seeds that you can sprinkle over just about anything for a touch of hidden fiber, omega 3’s and antioxidants. (I love to sprinkle it over oatmeal and even in my muffin or quick-bread batters!) Lactose-free and filled with essential vitamins and minerals, feel free to use this smoothie recipe as a jumping point for other flavor combinations—strawberry-banana maybe, or even a smoothie flavored with almond milk, ice and a touch of leftover coffee perhaps? The possibilities are endless…and super delicious.
