The newest superfood craze to hit the kitchen is black rice, also known as forbidden or longevity rice.  This purple-hued grain is an inexpensive source of the same antioxidants found in both blueberries and acai berries.  This natural antioxidant, anthocyanin, provides health benefits that have been proven to defend against conditions including cancer, neurological diseases, diabetes, and inflammation.  The deep hue of black rice is similar to that of blueberries or blackberries which when found in nature, is usually a sign of its heavy dose of natural vitamins and nutrients.  Incorporating black rice into your diet is a fantastic way to reap the benefits of these antioxidants, without consuming the sugar found in berries.

The story goes that this ancient grain was so rare and highly revered in ancient China, that it was reserved only for the plates of emperors.  Its nutty taste, tender texture, and striking visual appeal make black rice a very appealing grain to experiment with in the kitchen.  To cook black rice, simply boil it in salted water for about 30 minutes, or until tender.  Toss it with your favorite vegetables and a light vinaigrette for a pleasing side dish, or maybe even as the base for your next stir fry.  With all of its health benefits, nutritionists are beginning to wonder if black rice might surpass brown rice in overall nutritional value.  Both have a delicious nutty taste, so why not continue to use both?  After all, diversity is the spice of life.
