My hotel in Piano di Sorrento, Hotel Soleluna, has a delightful veranda on the second floor that houses over-sized, comfortable white lounge chairs and an array of colorful potted flowers and plants. I love the tranquility of this space, especially while I am writing or reading a few chapters of my current novel. The only sounds you hear are the busy buzzing of cars and scooters, and the ringing of the church bell from the bell tower on the corner. Sitting on the veranda you are shaded from the bright rays of the sun, but still benefit from the early Spring breeze and the gently hum of the happenings of the locals down below on the street.
Last night in our cooking class was, as always, a night to remember. Joining our class was a lovely lady named Lora from Dallas, Texas, and joining our dinner table in addition to our classmates, was a couple from Amsterdam and another couple from Denmark. We treated our dinner companions to a lovely four-course meal made up of: Zucchini Rolls with Smoked Mozzarella Cheese and Béchamel Sauce, Homemade Orechiette with a Tomato Sauce, Braciole served with a fresh Fennel Salad, and for dessert, a seasonal Strawberry Spongecake. A lovely ending to a lovely day, filled with plenty of laughter and many compliments to the chefs.

E squisito Leanne! It also works very well with eggplant slices, too. We made the zucchini rolls last night with a creamy, bechamel sauce but I also loved the version we did last week with a simple tomato sauce. This would make a nice first course as we had it, or served on toothpicks even as an app for a cocktail party!
And I love the way the strawberry sponge cake LOOKS!!!….with espresso!!!…..:)
If you liked the way the strawberry cake looked, you would LOVE the lemon version we made a couple of weeks ago. Yes, espresso is the way to go! Anytime of day! 🙂
