We probably all think of a piping hot bowl of Japanese miso soup when we hear about miso paste, but did you know that it makes a great marinade or glaze as well? I like to keep a container of white miso paste in my fridge for a number of dishes; its mild, umami flavor adds a certain ‘je ne sais quoi’ to whatever you pair it with: some of my favorite pairings are not only salmon, but root vegetables and even chicken thighs. For this simple salmon dish, I pan sear two fillets until browned and flaky and then top each one with a drizzle of white miso paste that has been cooked down in dry white wine. I like to serve the fish with snipped fresh chives and some juicy lemon wedges for squeezing.

Miso-Glazed Salmon
Ingredients:
- (2) 6-7 oz. salmon filets
- 1 1/2 Tablespoons extra virgin olive oil
- salt and pepper
- For the glaze:
- 1 Tablespoon white miso paste
- 1/4 cup dry white wine
- For garnishing: snipped fresh chives and lemon wedges
Directions:
- Season each salmon filet with a pinch of salt and pepper. Heat the olive oil in a large saute pan over medium-high heat.
- Cook the seasoned salmon in the hot pan for 4-5 minutes per side (flipping once) or until the salmon is nice and browned and flaky on the inside.
- In the meantime, add the miso paste and white wine to a small saucepan. Heat over medium-low heat, whisking often, until the mixture is warmed through and smooth.
- Serve the salmon with a drizzle of the miso glaze, with some snipped chives and lemon wedges for squeezing.
