Kofta are flavorful, cigar-shaped Turkish meatballs that are made either with ground beef, lamb or a combination of both. Sometimes served on skewers, this specific version is flavored with finely chopped red onion, garlic, ground cumin and cooked bulgur wheat. The bulgur wheat in the recipe appears not only in the actual meatballs, but as an salad topping as well. The recipe calls for kale in the salad, but use whatever greens you have on hand—along with the crumbled feta cheese, cherry tomatoes, sliced red onion and flavorful vinaigrette.
